The book documents the process of restoration and recovery of the colonial building which today houses one of the most important bibliographical and newspaper collections on food in Mexico: the Herdez Foundation. The authors belong to various educational and cultural institutions like the UNAM, the Proyecto Templo Mayor, amongst others. This document also is a tribute to its founder Enrique Hernández-Pons and to Jaime Muñoz de Baena, its first director, as well as for Ph.
