Abstract: A cookbook prepared by the American Heart Association presents an approach to cooking and eating which emphasizes a low salt, modified fat diet to help reduce risk of developing heart disease. Since sodium is a natural component of so many foods, most people can meet sodium requirements without using the salt shaker. For this reason, recipes contain no added salt. The use of polyunsaturated rather than saturated fats is also recommended to lower the cholesterol and fat content of meals. Hints for shopping, cooking, seasoning, and ingredient substitutions are suggested. Recipes for entrees, sandwiches, vegetables, salads, breads, soups, dressings, sauces, desserts, and snacks are given. Calories per serving and a nutrient analysis are listed for each recipe.
